Chicken Tetrazzini

#21 - Chicken Tetrazzini - yum, yum good!!


Got this recipe from Money Saving Mom and tried it for lunch. Yummy yummy good!! This is one she makes and freezes in gallon size freezer bags. I wanted to try it first before I freeze a whole bunch. Everybody but Caleb loved it (he is currently on a no chicken noodle casserole kick). I was really glad that last time boneless chicken breasts were on sale I bought several packages. When I got them home from the store I boiled several packages and made up freezer bags of 2 cups of cut up chicken. Then I just threw the frozen chicken in and cooked it. Soooo easy to have that chicken cooked ahead of time!!

Chicken Tetrazzini
2 c. cooked chicken
2 c. cooked spaghetti noodles
1 can cream of chicken soup
1 c. chicken broth
1/4 c. green pepper
1 small onion (I didn't have an onion so just added some onion powder)
1.5 cups shredded cheddar cheese
(I added a little garlic powder as well)

Saute green pepper and onion in a little oil. (I didn't do this)
Combine soup and chicken broth then add all other ingredients and stir together.
Put in a 9x13 dish and cook for 20-30 minutes at 350 degrees.

No more toast

#16 - After 2 days of toast he gets to eat pancakes

I had to cut him off after 6 pancakes. He asked for pancakes for lunch too. His appetite is fierce after having to eat toast for 2 days to clear up the diapers and he is always hungry. He loves this new recipe I got from my friend, Leanne. I have not made pancakes much because I just can't get them right and the boys never eat them well - because they are flat and never cook well. So I got Leanne's recipe and the other night it was just the boys and I for dinner so I decided to try it. Since Sam was working I figured I only needed half the recipe.

I didn't get to eat any pancakes. The boys ate them all. As fast as they came off the griddle.

So I made them again this morning so Sam and I could eat some. Next time I will get my other griddle out and double cook as they were eating them faster than I could cook them.

They are good. Really good.

Leanne's Pancake Recipe
In a large bowl combine
2 c. whole wheat flour
4 tsp baking powder
2 tsp salt (I only used 1 tsp - 2 was too salty for me)
3 tbsp sugar

In a smaller bowl beat 2 eggs then add 2 c. milk, 1/2 c. oil and 1 tsp vanilla

Add wet ingredients to dry ingredients and mix just until combined.
